SCCP/SCTP is not standardized and therefore not supported. But you
can read files in libpcap format which contain MTP2 frames or
MTP3 frames. You can also read from a pipe. Does that help?

No, I hope not. I have either SCCP over SCTP, SCCP over MTP3 or MTP3
over MTP2, depending on which transport I use and where I capture. The
probably is that I would put these SCCP or MTP3 package on UDP, and
then Ethereal does not recognize it.

Unfortunately I have no experience with SCCP in Ethereal (that is in
the regular SS7 stack), because the hardware is not supported by
Ethereal. SCCP over SCTP seems to work fine, but that is not my main
interest.
