Ethereal can save a selected rtp-stream in rtpdump format, but then you do it
from  Statistics/RTP/Show all streams...  with the "Save As" button.
The "Save Payload" button in RTP Analysis only supports G.711 and saves in au-file format.

Dependent on what codec is used, it may be possible to send the rtp-packets
towards e.g. JMF JMStudio or QuickTimePlayer with e.g. rtpplay.
