with https://github.com/teto/mptcpanalyzer and 1 pcap captured at both
end, you can plot the one-way-delays and see losses but only for
(MP)TCP connections for now.
I developed it because I wasn't able to find what you suggested. You
may be able to modify the code to support your protocol.
