Have a look at ettercap, as this can process live data and display stream information.
I know it is not directly what you are after but it may point to a solution.
I have used this for watching SMB traffic in real time, and pulled out some useful information.

Subject: [Ethereal-users] Packet Data Reassembly

Hello,

Are there any programs out there that will take packet data and reassemble the raw data into files?  For instance, I have a packet dump of a jpeg image being sent through an http connection.  Would there be a way to grab that image?  Or lets say that you load a text file through a windows share/SMB?  Or an image, or even a video?

I've tried looking through the archives, and a couple of searches on google and freshmeat, but nothing of notablility.

Thanks for your time,
