This is where it's documented in README.developer:

PROTOABBREV    A name for the protocol for use in filter expressions;
        it shall contain only lower-case letters, digits, and
        hyphens.

The crash isn't very helpful unless you can see the console screen where it
displays this message:

10:24:21          Err  Protocol filter name "eXec" has one or more invalid
characters. Allowed are lower characters, digits, '-', '_' and '.'. This might
be caused by an inappropriate plugin or a development error.
Abort (core dumped)

You can tell Wireshark on Windows to display the console when there are errors
or always in the preferences.
