Yes, you can use it that way. If it would change the "user traffic" in any way that would be a bug.

2) Since I run many sessions continuously, how can I 'chop up' the Ethereal capture data according to these sessions?

You may do this manually or try to use the LUA scripting which is included in latest developer builds.

But I don't have a clue how this can be done.
