No, we don't do "tabs" in the sense of "tabs" in browsers, some text editors, or terminal emulators.
In the context of Wireshark-on-macOS, note that Wireshark is, in some ways, more like Mail.app than like Safari or Terminal.app, with the packet list being like the list of mail messages and the detail and hex-dump pane being like the message content pane in Mail.
You can, however, open a packet in a new window - just double-click the packet (just as in Mail.app).
