I've got wireshark 1.0.8, and trying to figure out how to get it to work,
assuming it can do what I want to accomplish.

I'm having troubles visualising what you've done. How are your boxes
connected to eachother? Via a switch? If so, you wil not see that traffic.
Install wireshark on your host system where the VM is running on. That
should work. Or on the client. If both are not possible, you will need a
hub. Not a switch. Or a expensive switch that has the possibility to congure
a SPAN port.
