Hi Robin,

There are a number of options:
1- Write a dissector as a plug-in or as built-in: http://www.wireshark.org/docs/wsdg_html_chunked/
2- Write a dissector using LUA: http://wiki.wireshark.org/Lua/Dissectors
3- Wireshark Generic Dissector: http://wsgd.free.fr/ (I must admit I haven't tried it myself though)
4- Request dissector for new protocol by creating a enhancement bug at https://bugs.wireshark.org/bugzilla/
