I saw that the new function has been committed with r52393

We can have sometime, in the flow with z/OS some part of the strucuture that
are in EBCDIC (It's often the MQMID, that contain a part in EBCDIC and a part
as bytes), although the whole packet is considered as ASCII. So I think it's a
goodf thing to dipslay this part of the structure in EBCDIC and in ASCII, and
replace non-printable char as dot, because we don't need the value of the BYTE
part.

So, if you think it is better to keep some consitency in the Wireshark Display,
but then we can loose somer info due to the length of what is displayed.

IMO, i would prefer to keep the display, because it brings a + in the display,
and there is also 2 sort of format_taxt, one where all non-printable char are
displayed as escape and one where whitespace are displayed as spaces, so why
not a third one

But if you don't agree, I will then remove such call, andremove the function
from the strutil (as it is already commited now)
