I just ran into this same issue today. It would be nice to have that
ASCII/EBCDIC option. In my case I am decoding IP/UDP datagrams containing
EBCDIC data. I know its EBCDIC because I used the "Follow UDP" option then
clicked on "EBCDIC", very similar to the user that reported this.
