There's README.macosx that explains how to install the ChmodBPF script as a
startup item. Unfortunately I don't know where you'd find these things once
Wireshark is, erm, installed, but you can get to it from the source here:
http://anonsvn.wireshark.org/viewvc/trunk/packaging/macosx/ChmodBPF/
I think there are also some bugs related to that not always working, though.
