So Wireshark is detecting that UDP packets (all of them?) generated by the
system that is running Wireshark (e.g., outbound packets only) have incorrect
checksums?

That's almost certainly UDP checksum offloading, similar to:

http://wiki.wireshark.org/TCP_checksum_offload

Closing this on the assumption it's the same thing, you can reopen it if you
think it's not.
