ethereal.pod is currently generated from ethereal.pod.template by 
stuffing the filter information into it in place of the

	=insert_dfilter_table

line.

You'd need to remove that line (and the text that implies that the list 
of filtering fields is there - put in a references to the 
ethereal-filters man page, isntead), and check the resulting text in as 
ethereal.pod.  (Then do the same for tethereal.pod.)
