You could try to disable all protocols (Edit/Protocols...  "Disable All" + Apply + OK) before starting the capturing.
Then save the file and after that you can experiment with enabling all protocols and see if you get a hanging. 

You could for example use tethereal to see for what packet you get the hanging.

There has been some faults in different dissectors that has resulted in hangings for certain capture files.
