Go to Capture ->
Options -> Use Multiple Files.
There are lot’s of
settings for the rolling buffer you are seeking.

Subject: [Wireshark-users] Is it possible
to back-up packet captures indefined time
interval...
I am capturing packets
during Bulk Call scenario.
Once the capture file
reaches a certain size limit, the wireshark displays out of memory error and
existing capture also goes off.
Is there any way
to store the captures periodically in to a predefined files, (ex). i want
wireshark to store the captures for every hour in a
file.
