Do you get blanks or zeros when you run tshark with the options above? 
I just tried with a file that has 68%, 0% and 100% signal strengths and
got three zeros instead of the actual values.  Would you mind opening a
bug report at http://bugs.wireshark.org about this problem?  And yes,
wlan.signal_strength is a correct field that should work.
