I have now tested to restart Wireshark, and the result was the expected:
Wireshark came up fine but my color filter was gone.

This is not a major issue, as my personally defined filters are written with
"contains", so to get the right colors for my earlier mentioned Call-ID i use:
sip.Call-ID contains "6190411.2724"

I guess the the possibility to highlight the Call-ID, right click, "colorize
with Filter" and select a color works due to that it is not written to file!? I
mean, it won't be saved if I close Wireshark.

Anyway, can this be considered a bug and be fixed?

Due to my very limited C knowledge (unfortunately I was a Ctrl+c/v kind of guy
in the university, which I regret now), I can not come with a suggested
solution myself.

Thanks!
